This brilliant recipe came to us from one of our most interactive Leaner Living friends, Amy Weschler. I was extremely excited to hear from her that she had utilized our vanilla MRP to make banana bread using almond flour, oats, and coconut oil. Banana bread is certainly one of my favorite treats, but due to its obvious caloric bomb of glycemia and lipemia, I very rarely indulge and I don’t even remember the last time I tried some, so you may understand why I was so excited to learn of her success in this experiment! We tried it out ourselves, and sure enough, it was amazing! Better yet, all the ingredients are “Leaner Living” approved and have many healthful benefits. What is needed (Makes 1 loaf):
- 2 tbsp coconut oil
- 2 bananas (very ripe!)
- 1/2 cup almond flour
- 2 scoops Vanilla Leaner Living MRP
- 2 whole eggs
- 1/2 cup oat bran (or oat flour)
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Preheat oven to 350 degrees
- Mix “dry” and “wet” ingredients in separate bowls then combine
- Place in greased (we used olive oil spray) loaf pan
- Place in pre-heated oven
- Bake for 40-45 minutes (done when edges separate from side of dish)
- Allow to cool prior to serving
- Enjoy!
